flying feathers

while the girls ripped open a bag of feathers {note: this was WAY out of my organized comfort level}….i sat there and cringed….not feathers!!!! instead of picking them up one by one, i realized this was a perfect time to cook dinner. with feathers literally flying through the air, i turned my back on the very occupied girls and whipped up dinner. you do, what you have to do….. right? this dish was way to easy and very delicious! great served with some mashed potaters and salad

have you ever had or made popovers? i have had them, but never made them, until today. they are so fluffy and amazing that i thought these would take great skill to achieve. lets just say i think this was the easiest thing i have ever cooked in my life. i hardly had time to snap a photo before hands were grabbing this babies out of the pan. ryan was pretty much freaking out over them and said it was one of the greatest things i have ever made. {if only all cooking were as easy as this} i found my popover pan here in our small town for $14. so i am sure you can find one anywhere. once you take them out of the oven, serve immediately. spread with warm butter and strawberry jelly/jam. my mother said strawberry is the best and i have to agree. coconut cream pie

i was so fortunate growing up, to have my grandmother live blocks away from me. some of my greatest memories from childhood revolve around being at her home. every time i went to her house, she had coconut cream pie waiting for me. i felt so special, and thought she must have spent her morning in the kitchen preparing a delicious cake for her granddaughter. by the time i was old enough to ask for the recipe and “try” it on my own, she had lost some memory and could not remember ever making coconut pie for me. i begged her to please remember…..it was there for me every time, how can she not remember. dagger to my heart.  finally after many years of trying elaborate recipes i figured out her trick. it is so simple that it made me laugh. all the years i thought she was baking the days away, all she did was add milk to a package of pudding. that’s it! so easy ! that cake was part of my childhood – isn’t it the simple things that we love the most. i love you mamaw and my family loves eating this cake.

coconut cream pie

1 box of instant coconut cream pudding

2 cups of milk

1 pre made graham cracker pie crust

directions

pour pudding and milk together and mix for 2-5 minutes until thickened

pour into pie crust

refrigerate and enjoy!

{we make this with pistachio pudding as well and it is yummy}

*mamaw is still living – her memory is going away day by day. she is and always will be the most innocent person i know. she never learned to drive a car, never learned to swim, never had a sip of alcohol, she is a simple woman and never needed much,she loved others well and was a very present person through all my life. i wish i could wrap my arms around her now – i hope you are warm in your bed tonight sweet mamaw

10 min perfection

10 minute meal of perfection

if you are a master chef, or have no idea how to cook – this meal is amazing!  i came up with this little concoction and we cannot get enough of it. it may look a little odd to some, but i promise if you try it……then you’ll like it. {all i can think of is gabba gabba – how many times we say that phrase to lucy  - try it and you’ll like it! if you don’t have kids, you will have no idea what i am talking about:)}

here is what you need:

1 pizza crust or naan bread (i love this square pizza crust!}

hummus {to spread all over pizza crust}

1/2 roterserie chicken cut up

2 cans atichoke hearts cut up {i mainly just use the actual heart}

small baby cucumbers cut up

feta cheese

olive oil, salt, pepper, orageno

1. set your oven to 350 and bake your crust – you want it to be a bit crispy

2. cut up your cucumber, artichoke hearts, chicken

3. when pizza is done cooking, take out at assemble as follows:

spread with hummus, sprinkle chicken all over {i don’t use a ton}, artichoke hearts, and cucumbers{i don’t love cucumbers, but on this dish they are amazing!  i use a lot of them} next generously sprinkle feta cheese all over, salt, pepper and oregano and drizzle with olive oil.

cut up and enjoy! we LOVE LOVE LOVE this in my home. it is soooooo easy and fresh!

the kitchen is the heartbeat of our home

morning coffee and first of the day hello’s, late nights eating cake and recapping the day, family dinners, feeding my children in highchairs, trying new recipes, making cookies with the girls, ryan in the kitchen preparing his famous french toast, making meals for others, grandmothers baking with the girls, friends, fellowship, laughter, tears….have all happened in my kitchen.

life seems to revolve around this room

6 years ago i did not know how to chop an onion or poach an egg and now, cooking is a part of me, one of the greatest gifts i ever taught myself. {thank you ryan for tasting all my trail and errors:} one of the greatest feelings in the world is when i prepare a meal and ryan raves about it. {don’t you just love that too?} or when those tiny hands reach for another piece of mommy’s banana bread {michael anne points and screams until more is in her mouth} preparing food for others is such a rewarding feeling. i love nourishing my family through food and all the interaction that comes from our kitchen

the kitchen is a place of giving. just today, i was also able to provide a meal to a neighbor in need. i came home and got a call from a sweet friend who was thinking of me and brought over a delicious cake. food is a gift of the heart.

the kitchen is a place for learning ~ my little women watching me cook, tasting what i prepare. i hope that they grow to have favorites, request a special meal that my hands made, come home from college and feel they are HOME by the smell of something cooking in my kitchen. i hope to teach them how to prepare food for their families one day and the importance of providing food for others. i dream of having grandchildren to run into my kitchen and spoil them with my cookies and cake.

ever need house warming gift and not sure what to get? this is such a FANTASTIC idea!

try this recipe ~ it makes enough to share with another. make it this week, and call someone to tell them you are bringing them dinner:) {this is a super fast and easy meal}{oh and super delicious}

Alfredo Pesto Pasta {given to me by my neighbor gena, but adapted slightly}

1 bag penne pasta

3-4 cups fresh spinach {not cooked}

2 jars alfredo sauce

2 jars pesto sauce

2 packages italian blend cheese

2 cans diced tomatoes {sometimes i use garlic tomatoes}

2 bags pre cooked and sliced chicken breast chopped into cubes {i am usually anti bagged chicken, but it is so quick and totally works for this meal. time saver}

1/2 cup milk

parmesean cheese and italian panko{or bread} crumbs so sprinkle on top

1.boil your pasta

2. in the meantime, add all the other ingredients into a large bowl mixing together. {yes it is that easy!} add your pasta. mix again.

3. pour into casserole dishes

4. sprinkle generously with parmesan cheese and panko crumbs

5. bake 350 uncovered until bubbly

so easy! and a great meal for sharing with others.

my new favorite chicken

she smiles at me all the time and that makes this mama happy! smiles are so much better than her frowns. although her frowns are pretty cute when she sticks out that bottom lip! my sweet baby!

thanks to my bestie suz {bestie of 11 years} she just gave me a fantastic new recipe! its quick,easy, healthy and super delicious! how can it get better than that? the only thing that could get better is if we had a secret tunnel to each others houses. i would want to spend all day with you! i miss you!

Diet Herb Chicken

4 boneless skinless chicken breast

1/2 cup water

2 bouillon cubes

2 T soy sauce

2 T worcestershire sauce

1 T lemon juice

1 tsp. rosemary (i used dried that was chopped)

1 T italian herb blend

1 1/2 tsp Thyme {again dried}

1-Dissolve on high 2 chicken buillon cubes in 1/2 cup of water until it boils

2-turn heat off of and add: 2 TB of worchestshire sauce, 2 TB soy sauce, 1 TB lemon juice, tsp of rosemary, TB of italian herb seasoning, 1 1/2 tsp of thyme

3-wash chicken breast and pat dry – put breast in pyrex dish- sprinkle with salt, pepper and garlic powder on both sides then pour the herb mixture over the breast

4- cook at 325- 15 minutes, then turn chicken over.  Cook another 15 minutes.  Then turn chicken over again and cover with foil and cook for 30 minutes.

SOOOOOOOOOOOOO much better than grilled chicken. Does anyone REALLY like grilled chicken….isn’t it a bit dry? well it is to me. whenever ryan wants to fire up the grill, grilled chicken just doesn’t get me all excited. but diet herb chicken does. it really is so flavorful and very moist. as yo gabba gabba would say, “try it, and you’ll like it”

what i’m eating

literally i am sitting here and showing you what i am eating for lunch – its my new favorite quick meal

Feta and Egg quesadilla with lemon zested greek yogurt and fried capers (i also used olives this time)

find the recipe  here. hers looks so much more gourmet:) it is so very fast to pull together. i used egg beaters to save on some calories. super yummy!

i loved this poster! make the most of every day because today will not happen again

i was up at 4:30 am watching the royal wedding while feeding tess – LOVED it! 7am lucy was plastered in front of the tv watching a real princess get married – she was thrilled!

anyone who visits our home knows we are a lemonade drinking family – i think lu would like this purple lemonade since that is her fav color and i would too because i love lavender

i would love love love to see my lulu in this number

i love this living room – love the pillows, basket the tree is in, ottoman!! love it – can it jump into my house magically?yummy smoothie find it here
